Ingredients

  • 1 Large onion (chopped)
  • 1 tin of mushrooms (or 8 fresh ones) (sliced)
  • 1 tin of chopped tomatoes
  • 1 tin of peas
  • 1 tin mini corn on the cobs
  • 1 carton of tomato frito
  • 450-550g chicken breasts (cut in to pieces)
  • 1 vegetable stock cube
  • 1 sachet of Paellero
  • 500g packet of Paella Rice
  • Salt and pepper to season
  • 1 litre Boiling water (from kettle)

Preparation

Step 1

Cook mini corn cobs in microwave for 5 mins or until soft.

Step 2

In a paella pan add the onion, mushrooms and chicken and cook until brown.

Step 3

Add the tomato frito, tin of tomatoes, tin of peas and corn cobs. Stir until all chicken is evenly covered.

Step 4

Put the Paellero sachet and veg stock cube in to a jug, add boiling water and stir until dissolved. Add half to the pan, season with salt and pepper and stir well.

Step 5

Add the rice evenly around the pan, and stir.

Step 6

Stir continuously for 20-25 minutes adding the rest of the jug as needed until the rice is cooked through.

Step 7

Serve with hot baguette.
