Chicken and Chorizo Paella

  • 2 cloves of Garlic, sliced finely
  • 1 Onion, chopped
  • 1 Carrot, chopped
  • Parsley, chopped
  • 70g Chorizo, chopped
  • 2 Chicken thighs (or breasts), chopped
  • 1 tablespoon Oil
  • 1 teaspoon Smoked Paprika
  • 1 Red Pepper, chopped
  • 1 tablespoon Tomato Puree
  • 1 Chicken Stock Cube
  • 300g Paella Rice
  • 750ml Boiling Water
  • 100g Frozen Peas
  • Salt and Pepper

Step 1

Put the oil in a pan and heat. Add garlic, onion, carrot, chorizo, chicken, paprika, and parsley and fry for 5 minutes

Step 2

Add the pepper and fry for 5 minutes more

Step 3

Add the tomato puree, chicken stock cube and rice. Stir well to coat the rice

Step 4

Add the boiling water, and season with salt and pepper

Step 5

Bring to the boil, and then simmer for 15 minutes

Step 6

Add the frozen peas and cook for 5 minutes more
