Do something different with a pack of tortellini
- 1 tbsp olive oil
- 2 carrots, chopped
- 1 large onion, finely chopped
- 1l vegetable stock
- 400g can chopped tomatoes
- 200g frozen mixed peas and beans
- 250g pack fresh filled tortellini (we used spinach and ricotta)
- handful of basil leaves (optional)
- grated parmesan (or vegetarian alternative), to serve

1. Prepare the stock first by boiling all the ingredients in a deep stockpot

Pour 100ml of boiling water over the porcini mushrooms and leave to soak
- 1 banana shallot, finely diced
- 2 garlic cloves, crushed
- 1 sprig of thyme
- 50g Porcini mushrooms
- 1 knob of butter
- 450g wild mushrooms roughly chopped
- 850ml vegetable stock
- 200ml Alpro soya cream (plus a little extra for garnish)handful of chopped parsley
