One-pot rice supper

Based loosley on a paella recipe, but using leftover roast meats from the weekend!

Ingredients

  • 300g rice (any), I use basmati
  • 1ltr stock (any) stockpots or cubes or homemade
  • Leek
  • Mushroom (optional)
  • Frozen pease
  • Leftover cooked meat (gammon, chicken, pork etc)
  • A little oil

Preparation

Step 1

Fry the chopped leek and mushrooms in a little oil, in a large saucepan.
Add the cooked meats, chopped into small cubes.
Stir in the rice.
Make up the stock as per instructions, then add to pan.
Bring to boil, then turn down low, cover, and simmer for 20 mins. Add an amount of frozen peas, as per requirement, the simmer for a few minutes, until all liquid has been absorbed.

This is a brilliant way of banishing food waste after Sunday dinner!!!!
Also good way to get kids to eat some veg - by cutting it up really small they have less chance of picking bits out!!!!
