twice boozed ham
a succulent smoked ham simmered in beer then roasted in cider, honey and ginger
Ingredients
- 0.75k smoked ham joint, 500ml any dark beer, 6 cloves, 4cm wedge of fresh ginger, 3 table spoons honey, 500ml any dry cider, 6-8 new potatoes, 200g carrots in skins - roughly chopped, 2 sticks of celery, roughly chopped.

Step 1
pour the beer into a deep pan, add the cloves, and the ham, and bring to the boil, - immediately lower heat and simmer for 15 minutes. Pour everything into an oven proof lidded pot, in a blender blend together the ginger and honey, make some incisions in the top of the ham and spread the mixture on top, add the cider to the mixture, as well as the vegetables, and roast in a medium oven for 45 minutes, basting the meat regularly, after cooking let the meat stand for 10 minutes covered in foil to help seal the basted liquer.
