Tart with sheep's cheese, ham and mushrooms

Make the pastry by putting the flour in a bowl with a pinch of salt. Work the butter, cut into cubes, with the flour using your fingers. Make a well in the centre and add the lightly beaten egg and one teaspoon of cream. Using a spatula, work the mixture slowly into a dough with no lumps and form a ball.
Place it in cling film and refrigerate for one hour before using. Spread the dough into a tin and leave to cool 20 to 25 minutes, the time to prepare the filling. Preheat the oven to 180 ° C. Remove the rind of the cheese and cut into strips. Arrange it on the pastry. Reserve again in the fridge. Clean the mushrooms and coarsely chop them into slices.
In a pan, fry them in hot oil for 10 minutes over medium heat. Add the minced shallot and parsley. Season and cook for another 2 minutes. In a bowl, mix the eggs, cream and herbs. Add the mushrooms and stir. On the cheese, add the strips of ham and chopped tomatoes. Pour the mushroom mixture on top. Bake for 40 minutes.
