Ceviche is a seafood dish popular in the coastal regions of the Americas, especially Central and South America. The dish is made from marinated fresh raw fish.

Ingredients

  • 222g fresh ocean fish such as sea bass, tuna, marlin, swordfish, salmon etc, cut into 1/4-inch slices
  • 60ml cup lemon, lime, or sour orange juice, or a combination
  • 1 small red onion, finely sliced
  • 30g chopped fresh coriander (cilantro) leaves
  • 1 to 2 jalapeño peppers, ribs & seeds removed, rinsed, and finely minced
  • salt and freshly ground black pepper

Step 1

Combine fish, juice, onion, coriander (cilantro), and jalapeño in a large bowl and gently fold with your hands to combine. Season to taste with salt and pepper.

Allow to marinate for at least 5 minutes 10 - 15 best, folding occasionally.

Transfer to a serving platter and serve immediately with boiled corn and grilled slices of sweet potatoes.

Ceviche is best when it's served within 5 to 30 minutes after marinating. Use the freshest fish available.
