Ingredients
- 2 handfuls new potatoes
- halved
- 1 whole smoked mackerel
- de-boned and flaked
- 1 bunch spring onions
- thinly sliced
- 100g baby plum/cherry tomatoes
- halved
- 1 tbsp olive oil
- extra virgin olive oil for garnish
- 4 cloves garlic
- crushed
- 1 chilli finely sliced
- 1 fish stock cube
- Half 1 green/yellow pepper diced

Step 1
Boil potatoes - simmer for 10-15 minutes
Step 2
In the meantime add the spring onions, tomatoes, garlic, chilli, and peppers into a pan with the olive oil. Soften for 5 minutes, and crumble in the fish stock cube.
Step 3
Stir in the mackerel and heat through until warm.
Step 4
Drain the potatoes and add to the pan with the rest of the ingredients.
Step 5
Serve into bowls and drizzle with extra virgin olive oil.
