Potato salad with wild garlic

  • 500 g of potatoes
  • 50 g wild garlic
  • julienned (sliced into thin strips)
  • 2 bunches of radishes
  • cut into wedges
  • vinaigrette:
  • 4 tbsp vegetable stock
  • 2 tbsp oil

Step 1

Cook the potatoes in their skin, either in boiling salted water or steamed. Peel the potatoes while they are still hot and slice them. Put them in a salad bowl.
For the dressing, mix the two ingredients together. Add the wild garlic to the bowl with the slices of hot potatoes. Pour over the dressing, mix and leave for 10 minutes. Stir in the radishes and serve!
