Fry the onion in the oil
- oil
- 2 garlic cloves
- 1 onion
- 1 courgette
- 400g tin of chickpeas
- 1 potato cubed
- 4 mushrooms
- vegetable stock cube
- 1 mug water
- 1 tbsp tomato puree
- 1oz sultanas
- 1 eating apple in medium chunks
- 2 tbsp curry paste
- Mint raita:
- ¼ pint yoghurt/creme frais/sour cream
- 1 tbsp fresh mint
Beef Curry

Put the beef chunks in a bowl and season with salt and pepper
- 2kg braising steak - chopped into bites sized chunks

This is delicious served on a cold day with freshly made kalunji roti or tandoori naan
- 3 lb red meat, cleaned and washed
- 3 onions, sliced thin (1 onion per lb of meat)
- 3-4 tsp ginger/garlic
- a few whole taj, lawung, mari, whole jeeru and elachi (cardamom)

- 1 glass water or milk (or use a combination of the two)
- 3 tbsp chana flour
- 1 tsp ginger/garlic

Heat the oil and fry the onions and garlic with the spices for 5 minutes over a moderate heat
