Beef Curry

Ingredients

  • 2kg braising steak - chopped into bites sized chunks
  • salt and pepper
  • 4 teaspoons garam masala
  • 4 tablespoons natural yoghurt
  • Spice Mix:
  • 4 teaspoon coriander seeds
  • 4 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 4 teaspoon mild curry powder
  • 1 teaspoon ground turmeric
  • 4-5 tablespoons olive oil
  • 4 large onions, finely chopped
  • 4 garlic cloves, finely chopped
  • 5cm piece of ginger, peeled and finely grated
  • 4 tablespoons tomato puree
  • 2 tablespoons caster sugar
  • 2 x 400g tins chopped tomatoes
  • 800ml beef stock
  • small bunch of fresh coriander
  • 6-8 cardamom pods
  • 6 long green chillies

Preparation

Step 1

Put the beef chunks in a bowl and season with salt and pepper. Add the garam masala and yoghurt. Mix well. Cover with cling film and put in fridge to marinade for at least 30 minutes (or overnight). Take out of the fridge as you start to prepare the curry.

Step 2

Spice Mix:
Dry toast the coriander, cumin and fennel seeds - tossing over a high heat for a few minutes until they are fragrant. Tip into a mortar with a pinch of salt and grind to a fine powder. Add the curry powder and turmeric.

Step 3

Heat a small amount of olive oil in a pan and add the onions, garlic, ginger with some salt and pepper. Cover and cook for 8-10 minutes, stirring occasionally, until onions are soft.

Step 4

Add a bit more oil and tip in the ground spice mix. Cook, stirring, for 2 minutes.

Step 5

Add the tomatoe puree and sugar - stir over a medium high heat for a few minutes. The onions should be lightly caramelised.

Step 6

Add the tomatoes, stock, coriander stalks, cardamom pods and whole green chillies.

Step 7

Add the beef and stir well. Partially cover the pan and simmer gently (stirring occasionally) for 3-4 hours until the meat is very tender.

Serve with basmati rice or warmed naan bread.
