Palak Gosht is a curry prepared with lots of (palak) spinach and (gosht) lamb
- • 1 kg Mutton (small pieces with bones)
- • 1 bag Spinach clean cut into small pieces
- • 3 Tomatoes: chopped
- • 2 tbsp Ginger Garlic paste
- • 1 large Onion chopped
- • 2 Green chillies
- • 1 tsp Crushed Red chilli
- • 1 tsp Turmeric powder
- • 1 tbsp Coriander powder
- • Cumin 1 tbsp.
- • 1 tsp Garam Masala Powder
- • 50 grams Butter
- • Oil 150 ml
- • Salt as per taste required
- • Fresh chopped coriander leaves 2 tbsp. to garnish.

- - 240g chickpeas

- 500gm Chicken (boneless and medium pcs)
- 1 cup Yoghurt or curd
- 3 or 4 Green Chillies (optional)
- 4 tablespoons of Ginger Garlic Paste
- 6-8 tablespoons of Oil : Ghee (preferred)/Sunflower oil
- Medium Size Onion: 2 no.s
- 10-15 Almonds (optional)
- 2 Egg (boiled and sliced)
- Spices:
- Cummin Whole(Jeera): 1/4 teaspoon
- Cinnamon (Darchini): 1/4 of a stick
- Cardamom (Elaichi): 3 small and 3 big
- Clove (Labongo/laung): 3
- Bay leaves (Tejpata) : 3
- Black peppercorns (Golmorich) : 10
- Garam Masala: ½ teaspoon
- Cumin powder (Jeera): 1 table-spoon
- Turmeric powder (Halud/Haldi): 1 tea-spoon
- Ginger powder: 1 table-spoon
- Garlic powder:1 table-spoon
- Red Chilli powder: 1/2 table-spoon
- Coriander powder: 1 table-spoon
- Saffron: A pinch
- Water
- Salt to Taste

Curry Sauce for all meats & fish
- Sauce:
- Oil for frying
- 2tbls Corn flour (or flour)
- Diced onion & garlic to taste
- 2tbls curry powder
- ¾ pint stock (or water & stock cube)
- 2tbls Mango Chutney
- 450 grams Meat diced into approx 1” cubes or Prawns
- Try 1/3 Coconut Block in to the sauce, (add with chutney) especially with white meats. Adds a creamy flavour to the sauce.
