Mild leftover meat curry

Use leftover cooked meat
- 1 cup of brown rice or quinoa
- At least 8 oz of leftover meat
- 1 can tomatoes
- 2 teaspoons of mild curry powder
- 1 organic stock cube (beef unless using leftover chicken when you should use a chicken stock cube)
- 1 large onion
- 6 large mushrooms
- 1 oz butter
- Hot water
Bhaji (spinach) and Chicken Curry

Mix the onions, oil, and all the remaining ingredients except the spinach and bullet peppers in a pot
- 3-4 bunches spinach, washed and chopped
- 2 onions, chopped large
- ~1/2 lb boneless chicken (thigh or breast meat, but I prefer breast), cleaned, washed and cut into medium sized pieces
- 2 tbsp oil
- 1 tsp whole jeeru
- 1 tsp salt (or to taste)
- 1 tsp ginger/garlic
- 1 tsp red chilli powder (+ some green if desired)
- 3 tsp dhana powder
- 3/4 tsp arad
- 2-3 fresh tomatoes, diced
- 1/4 tin tomato, blended
- a few whole bullet peppers (optional)
Chicken Dhansak Curry

To make the Onion Puree, bring a small pan of water to the boil and add some chopped onions
- 800g Diced Chicken, breast or dark meat as you prefer
- 1 Cup/300ml Water or Chicken Stock
- 2 Small white onions finely chopped
- 2 Teaspoons Ginger Puree
- 2 Teaspoons Garlic Puree
- 200g Butter Ghee
- 2 Teaspoons Turmeric Powder
- 4 Teaspoons Mild Curry Powder

- Roughly chopped fresh coriander leaves to garnish

- 12oz Chuck Steak
- 6oz Long Grain Rice
- For the Curry Sauce:
- 1oz Butter or Margarine
- 1 Onion, chopped
- 1/2 Cooking Apple, peeled & diced
- 2 level tbsp Curry Powder - more if you like it hotter
- 1 level tbsp Flour
- 1/2 pint Stock OR Water with Stock Cube

1. Heat oil in a pan. Add onions and fry for 3 min till golden
- 1 medium onion - peel and chop
- 2 garlic cloves - peel and chop
- 1 large tomato - chop
- 4 medium potatoes- peel and boil for 10 min. Then chop them.
- 4 tbl oil
- 1 medium cauliflower
- 1 tbl lemon juice
- salt and pepper to taste
