Grilled chicken in a curry Philadelphia sauce

  • 1/4 red chilli (seeded), finely chopped
  • 100g Philadelphia
  • 8 tomatoes
  • 1 clove garlic, finely chopped
  • 2 tsp ginger, finely grated
  • 500 ml chicken stock (cube)
  • 1 tsp oil for cooking
  • 600g chicken fillet pieces
  • Satay sticks (skewers)
  • Sprigs of coriander (leaves only)
  • 320g rice

Step 1

Prick the chicken on the skewers.

Step 2

Lightly salt the skewers.

Step 3

Grill for 6 minutes, or until golden brown.

Step 4

Fry the chilli, garlic and ginger in oil.

Step 5

Add the chicken stock and the Philadelphia. Heat and stir.

Step 6

Serve the skewers with the curry sauce, rice and a tomato salad.

Step 7

Garnish with coriander.
