Ingredients
- oil
- 1 onion
- 1 garlic clove
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- ½ tsp chilli powder
- 6oz/150g red lentils
- 1¼ pints/750ml water or vegetable stock
- 1 tin of chopped tomatoes

Preparation
Step 1
Heat the oil and fry the onions and garlic with the spices for 5 minutes over a moderate heat
Step 2
Add lentils, tomatoes and water
Step 3
Bring to the boil and simmer for 30 minutes
Step 4
Add more water if it gets too dry
Step 5
Serve with rice or naan bread
