Granny's veg soup

Family favourite
- 400g scotch broth mix
- 4 carrots
- 1 leek
- 1 swede
- 2 onions
- 1 medium celery or 2 sml
- Beef stock cube
Simple Thai noodle soup

A wonderfully warming noodle soup, with fragrant spices and a little heat all balanced with rich coconut milk
- 1 good knob fresh root ginger, peeled and roughly chopped
- 1-2 red chillies, seeds removed (optional), roughly chopped
- 1-2 stalks lemongrass, tough outer layers removed, roughly chopped
- 2-3 garlic cloves, peeled
- 1 handful fresh coriander, a few sprigs reserved and chopped
- a glug or two vegetable oil
- 1 tbsp coriander seeds
- 1-2 pinches ground turmeric
- small jug vegetable stock
- a couple of handfuls rice noodles
- 1 x 400ml/14fl oz can coconut milk
- 1 large handful raw, peeled tiger prawns (the shells and heads can be reserved for making stock in another recipe)
- a few splashes Thai fish sauce, to taste
Chicken Soup or stock

Never waste a chicken carcass! Make a soup to eat or a stock to freeze
- 1 chicken carcass
- (extra uncooked chicken breast may be added if carcass has no leftover chicken on it)
- 1 large onion
- Any selection of vegetables (but I use carrot, leeks, pak choi or any cabbage, cauliflower, broccoli)
- 1 x organic chicken stock cube
- Water to cover carcass
- Pepper to taste (at least a pinch)
- 1 tablespoon double cream (optional)
Leek & Potato Soup

- 1 tbsp vegetable oil
- 1 onion, sliced
- 225g/8oz potatoes, cubed
- 2 medium leeks,sliced
- 1.2 litres/2 pints vegetable stock
- 150ml/5fl oz double cream
- salt and freshly ground black pepper
- Pinch of Nutmeg
Butternut Squash Soup with Fresh Coriander

Finely chop the onions and garlic and sweat in olive oil for two to three minutes
- - Olive oil 50 ml
- - Big onions 1 kg
- - Garlic 1 head
- - Butternut squash, peeled and cut into large cubes 2 Kg
- - 5 litres water
- - Sprigs of coriander (reserve the leaves) ½ bunch
- - Crushed coriander bays 10
- - Salt, pepper
- - Reserved coriander leaves (to add at the very end ) 1/2 bunch

Velvety Broccoli and Stilton soup

Peel and chop the onion into slices (not too thin)
- 1 broccoli (about 500g)
- 1 onion
- 1 stock cube, chicken
- About 1 litre of water
- 100 ml crème fraîche
- 100 g stilton cheese

Butternut squash and sweet potato soup

Heat the olive oil and butter in a large pan, add the onions until soft
- 1tbsp olive oil
- 15g butter
- 1 red onion chopped
- 150g carrots sliced
- 500g butternut squash cut into cubes
- 1 medium sweet potato
- 100g red lentils
- 1l hot vegetable stock
- 3 level tbsp. of tomato puree
- 3 tbsp. chopped parsley
- 100g crème fraiche
Tomato soup

Melt half the butter in the saucepan
- 55g butter
- 1 small onion, finely chopped
- 450g tomatoes chopped
- 1 bay leaf
- 3 tbsp. plain flour
- 600ml milk
- salt and pepper
- sprigs of fresh basil to garnish
Carrot and Coriander Soup

Melt the margarine in a pan and add the carrots, potato, onion, celery and garlic
- 25g/1oz margarine
- 500g/1lb carrots sliced
- 1 medium potato chopped
- 1 onion chopped
- 1 stick celery chopped
- 1 clove garlic chopped
- 900ml/1½ pints water
- 1 tsp ground coriander
- pinch of sugar
- generous handful of fresh coriander roughly chopped (about 2 tbsp)
Spicy Parsnip and Rice Soup

- 400g parsnips
- 100g long grain rice
- 1 chicken stock cube
- 1/2 a teaspoon of Taos Lightning Chilli Powder blend (or similar)
- salt
- pepper
- 500 ml milk
Spider Web Pumpkin Soup

Place the chopped onions in some oil in a large pan on a medium heat for about 5 mins
- For the soup:
- 1tbsp olive oil
- 2 chopped onions
- 1kg pumpkin or butternut squash (peeled and chopped into 2cm chunks)
- 1tbsp mild curry powder
- 3 chopped garlic cloves
- 700ml chicken stock
- 150g pack of finely chopped smoked turkey rashers
- For the spider's web:
- Natural yoghurt
- Skewer stick
