Velvety Broccoli and Stilton soup

- 1 broccoli (about 500g)
- 1 onion
- 1 stock cube
- About 1 litre of water
- 100 ml crème fraîche
- 100 g stilton cheese
- Olive oil

Peel and chop the onion into slices (not too thin).
Wash the broccoli and cut off the stalks.
In a large pot, heat a little olive oil and lightly fry the onion. Add the broccoli and cover with water. Add the chicken cube. Cook 30 minutes over low heat.
Mix everything with a hand blender. Add the stilton and creme fraiche and blend again.
Serve hot as a delicious winter starter!
