Broccoli Soup

- 25g butter
- 4 potatoes, peeled and finely chopped
- 4 onions, peeled and chopped
- 2 heads of broccoli with stalks
- 2 pints hot chicken stock
- 284ml double cream
- salt and pepper

Preparation
Step 1
Melt the butter in a medium-large saucepan and add the potatoes and onions, salt and pepper.
Step 2
Put the lid on and sweat (at no3) over a gentle heat for 10 mins.
Step 3
Meanwhile, cut the broccoli florets from the stalk. Using a small knife, remove the outer layer of skin from the stalk and discard, then chop the stalk finely. Add to the onion and potato and sweat for a further 5 mins.
Step 4
Add the hot stock to the potatoes, onion and broccoli stalk, bring up to the boil, then add the chopped florets.
Step 5
Boil without the lid over a high heat for 4-5 mins until soft, then add the cream.
Step 6
Remove from heat and season to taste.
