Soup: Heat butter and oil in a pan
- Soup:
- 7g butter
- Olive oil
- Head of celery (trimmed and chopped)
- ½ an onion (peeled and chopped)
- 50g stilton (crumbled)
- 400ml hot stock (vegetable/chicken)
- Salt and pepper
- Toast:
- 30g stilton (crumbled)
- 1 tablespoon crème fraiche
- Parsley
- Slice of bread (crusts removed)
Stilton Dauphinoise Potatoes

Preheat oven to 200oC
- 150ml double cream
- 15ml full cream milk
- ½ a very large potato (peeled and very thinly sliced)
- 25g butter
- 100g Stilton (crumbled)
- 2 garlic cloves (crushed)
- Salt and freshly ground pepper
Beef and Stilton Turnovers

- 200g self raising flour
- 15g butter
- Pinch of salt
