In a large saucepan fry the onion in 4 tbsps olive oil
- oil
- 1 large onion chopped
- ½ tsp chilli powder
- 12 oz/300g brown rice
- 1½ pint/800ml vegetable stock
- 1 tbsp tomato puree
- ½ tsp tarragon
- 1 tsp basil
- 1 tsp oregano
- 1 red and 1 green pepper roughly chopped
- 3 sticks celery
- 8 oz/200g mushrooms sliced
- 2 oz/50g mange tout topped and tailed
- 4 oz/100g frozen peas
- 2 oz/50g broken cashew nuts
- 1 Tin/454g chopped tomatoes
- 150ml dry white wine (or substitute with 1 tbsp vinegar)

A tasty, traditional dish that's simple to do & full of flavour
- 1 Large Onion -chopped finely
- 1oz Margarine
- 1oz Plain Flour (1 heaped tablespoon)
- 1/2 pint Stock or Water
- 1 lb Cold Cooked Lamb
- 1 rounded teaspoon Meat or Vegetable Extract - optional
- Salt & Pepper

- 1lb Freshly Cooked Potatoes
- 1oz Margarine

Traditional Chicken Pot Pie

Place chicken pieces in the bottom of a pie dish or baking pan
- 2 C cooked chicken, finely diced
- 1 C boiled potatoes, cut into small chunks
- 1/2 C boiled carrots, sliced
- 1/2 C boiled white onion pieces
- 1/2 C cooked peas
- Gravy:
- 4 C chicken stock
- 3 tbsp butter, melted
- 3 tbsp flour
- salt & pepper to taste
- Crust:
- 1.5 C flour
- 1/2 tsp salt
- 1/2 C shortening
- 4 tbsp cold water
Potato and cauliflower curry

1. Heat oil in a pan. Add onions and fry for 3 min till golden
- 1 medium onion - peel and chop
- 2 garlic cloves - peel and chop
- 1 large tomato - chop
- 4 medium potatoes- peel and boil for 10 min. Then chop them.
- 4 tbl oil
- 1 medium cauliflower
- 1 tbl lemon juice
- salt and pepper to taste
- 1 tbl curry powder

- 250g basmati rice
- 2 tbsp vegetable oil
- 2 garlic cloves, finely chopped
- 1 red chilli, deseeded and shredded
- 2 eggs, beaten
- 200g frozen peas
- 1 bunch spring onions, finely sliced
- 285g pack cooked small prawns
- 1 tbsp soy sauce, plus extra for serving, if you like
