Ingredients
- 1 Large Onion -chopped finely
- 1oz Margarine
- 1oz Plain Flour (1 heaped tablespoon)
- 1/2 pint Stock or Water
- 1 lb Cold Cooked Lamb
- 1 rounded teaspoon Meat or Vegetable Extract - optional
- Salt & Pepper
- Topping
- 1lb Freshly Cooked Potatoes
- 1oz Margarine
- 2 tablespoons Milk
- Salt & Pepper

Step 1
Pre-heat oven to Gas Mark 6 : 400F/204C - shelf on third runner from top
Step 2
Have ready a medium-sized pie dish. Heat the margarine in a saucepan & fry the onion over a low heat until cooked
Step 3
Add the flour & stir over a low heat until beginning to brown. Remove from the heat & gradually stir in the stock or water. Return to the heat; bring to the boil & cook for 2-3 minutes, stirring all the time.
Step 4
Stir in the cooked lamb. Add the meat or vegetable extract, if using, & season to taste. Put in the pie/casserole dish.
Step 5
Mash the potato with the margarine & seasoning, beating until smooth. Carefully spread the prepared potato over the lamb & mark the top with a fork.
Bake in the pre-heated oven for 25-35 minutes.
Step 6
Serve with fresh vegetables or baked beans.
At the end of step 3, try using a whisk when stirring, it should help to break down any lumps of flour that may occur & give you a smooth gravy.
