Prime cut of beef with quince vinegar and caramelised apples

- 4 prime cuts of beef
- 3 golden apples
- 2 onions
- 10cl quince vinegar
- 50g butter
- 1 tbsp olive oil
- 5 tbls quince vinegar
- salt and pepper

Preparation
Step 1
Fry the cuts of beef in oil and butter for 2 minutes on each side, until they have a nice colour. Reserve in a warm place.
Tip: Oil and butter together to cook your meat is the best way to achieve a nice colour. Leave aside as long as you can as this makes the meat tender.
Step 2
Remove the fat from the pan, add the diced onions, the apples cut in quarters. Fry with butter and pepper. Deglaze with 20cl of vinegar and cook for 3 minutes.
Step 3
Use some olive oil and quince vinegar to make a dressing and warm it.
Step 4
Garnish th eplates with the prime cuts, sliced. add the dressing and the caramelised apples as a side dish.
