Peel the quinces and slice into quarters, removing the middle and pips and cut each quarter into half again (making segments about 1cm thick). Melt the butter, add the sugar, the segments of quince, and fry gently until brown. Check for doneness by pricking with a knife and remove your quinces and place them in a dish making a sun shape.
Melt the chocolate in a double boiler. Meanwhile peel the figs and cut in two. Pour the chocolate in the centre of the quinces. Decorate with fresh figs and mint leaves. Serve, eat your fruit by dipping in the chocolate, still warm.
