- 2 cups dried white chickpeas soaked overnight in enough water
- 2 inch cinnamon sticks
- 4-5 black cardamom
- 1 large bay leaf or 2 medium bay leaves
- 1 tsp ginger paste
- 4 tsp black tea leaves or 3 tea bags
- ¼ tsp baking soda (optional)
- Salt or black salt as required
- Masala gravy:
- 1 large onion, chopped
- 3-4 medium size tomatoes, chopped
- 1 tsp chopped ginger
- 4-5 green chillies, slit or julienned
- 2 tsp cumin powder
- 2 tsp coriander powder
- 2 tsp fennel powder (optional)
- 2 tsp dry mango powder or 2 tsp dried pomegranate powder
- 1 tsp red chili powder
- 2 tsp garam masala powder or chana masala powder
- 3-4 tbsp oil
- Julienned ginger, slices of onion, sliced chilli and coriander leaves for garnish

- 1 cup channa dal
- ½ cup moong dal
- ½ cup masoor dal
- ¼ cup urad dal
- ¼ cup tuar dal
- 2 tablespoon Coriander seeds/dhaniya
- 2 tablespoon cumin/jeera
- ½ inch ginger/adrak
- 5 to 6 cloves of garlic/lehsun
- ½ cup Coriander leaves chopped
- 1 onion/pyaz chopped in rings
- 4 tablespoon gram flour/ besan
- 3-4 green chillies
- Salt to taste
- ¼ teaspoon baking soda
- Oil for deep frying

To prepare the dough for the paratha, mix flour, water, salt and oil to make a dough
- For the dough:
- 4 cup whole- wheat flour
- 1 cup water (you can use more if needed)
- A pinch of salt
- 1-2 tsp of oil.
- For the potato filling:
- 2 medium potato
- 2 tbp of oil
- 1/2 tsp tumeric

- 1/2 tsp chilli
- 1-2 green chilli (optional)

- Also need:
- an additional of 1/4 cup of flour to make the rolling process easier.
