- 2 eggs

Nihaari

This is delicious served on a cold day with freshly made kalunji roti or tandoori naan
- 3 lb red meat, cleaned and washed
- 3 onions, sliced thin (1 onion per lb of meat)
- 3-4 tsp ginger/garlic
- a few whole taj, lawung, mari, whole jeeru and elachi (cardamom)
- ~1/2 tsp salt (go careful on this is the Shan spice contains salt)
- 6 tbsp Shan nihaari masala (2 tbsp per lb of meat)
- ~ tsp red chilli powder (or to taste)
- a few tbsp chappati flour and/or cornflour
- fresh green dhana, chopped
- fresh ginger, slivered small
Kalunji Roti

This is delicious served with Nihari (an Indian broth type dish), as it is perfect for dipping and soaking up soup
- 2 tsp sugar
- 3/4 tsp salt
- 2 eggs, beaten
- 1 sachet yeast dissolved in about 1/2 a bowl of warm water
- 1 tub single cream (~250 ml)
- 1 heaped teaspoon kalunji (black seeds)
- 4 heaped tablespoons ghee, softened
- 1/2 tub milk (use the cream tub)
- ~ 21/2 tbsp yogurt
- plain flour to make a dough (about 1 kg)

This makes a filling vegetarian meal
- 1 lb potatoes (about 3)
- 1 lb fresh tomatoes (plus a couple extra), diced
- 12 oz onions (chopped in a chopper/food processor as for samusas)
- 8 oz cauliflower (about 1/2 a large one)
- 6 oz peas
- 8 oz carrots (about 2 medium)
- 4 dessertspoons Mangal paav bhaji masala (spice)
- 4 tsp crushed garlic
- 1 tsp red chilli powder
- 6-7 tbsp oil
- 2 tsp salt
- 3 oz butter (plus a bit extra)
- chopped green dhana

- ~ 1/2 bunch cilantro (green dhana), chopped
- Curry base:
- 1 small onion
- 1/2 tsp black pepper
- 1/3 tsp gharum masala
- 1 tin tomato, blended
