Ingredients

  • 2 Baby chicken (ask the butcher to remove the skin and cut the chicken into 8 pieces)
  • 8 Tomatoes (these need to be diced)
  • Oil (to cover the base of the pan)
  • Haldi (1/4-1/2 tsp)
  • Red Chilli Powder ( 1/2 tsp)
  • 7 Whole peppercorns
  • Salt ( 1 tsp per chicken)
  • Crushed Garlic (3-4 cloves)
  • Crushed ginger (1 tsp)
  • Dried tiny red chillies (10 pieces)
  • Corriander powder (Dhania powder) (1/2 tsp)
  • Garnish:
  • Fresh Coriander ( 1 bunch finely chopped)
  • Fresh green chillies ( 6-7 finely chopped)
  • Fresh ginger ( 1 tsp finely chopped)

Preparation

Step 1

Wash the chicken, heat a large pan with oil that covers the base.

Step 2

Add the chicken to the pan, keep the flame on high at all times.

Step 3

Stir in the crushed garlic, crushed ginger, haldi, red chilli powder, peppercorns, salt, dried baby red chillies and coriander powder

Step 4

Heat another frying pan with the diced tomatoes and oil, fry this until the tomatoes have formed into a paste.

Step 5

Stir the chicken occasionally ensuring that the chicken is covered in spices and is cooking well, once the chicken is golden, then add the diced tomatoes paste from the other frying pan.

Step 6

Cook until the oil rises above the curry sauce on the base of the pan.
8. Before serving garnish with fresh coriander, green chillies and ginger.

(If you want a more saucy base, then add more tomatoes and coriander powder)
