A really creamy, wholesome chowder that you will struggle not to finish, even if you make more than enough
- 2 fillets of natural smoked haddock
- 2 medium sized potatoes
- 2 onions
- 2 leeks
- 2 carrots
- 1 small tin of sweetcorn
- 2 pints of milk
- Handful of parsley
- A dash of cream
- Lemon

For the beurre blanc, place the shallots, vinegar, wine and water into a saucepan
- 2 shallots, finely chopped
- 60ml white wine vinegar
- 60ml dry white wine
- 60ml water
- 125g cold unsalted butter, cut into small chunks
- 10 scallops
- dash olive oil
- salt and freshly ground white pepper
- fresh chives, finely chopped, to garnish

Cook the potatoes with the skin about 15 minutes
- 4 filets sea bass with skin
- 500g sweet potatoes
- 1 clove of garlic
- 150g tomatoes, skin removed, cut into cubes
- 5 sweet basil leaves (or Thai)

One of the best ways to cook fish – the foil bag keeps the flavours beautifully intense
- 1 free-range egg, beaten
- 100 g waxy potatoes
- ½ bulb fennel, trimmed and cut into wedges, frond reserved
- ½ lemon, finely sliced
- 5 cherry tomatoes, halved
- 1 drizzle olive oil
- 1 handful pitted black olives, halved
- 120 g firm fish fillet, such as haddock, halibut or salmon, from sustainables sources, ask your fishmonger, skinned and pinboned
- sea salt
- freshly ground black pepper
- 1 splash white wine

Cut the carrots and the leeks and steam for 5 minutes
- 8 red mullets of 60g
- 1 bunch of baby carrots
- 1 leek
- 200g fresh pasta
- 50g pine nuts
- 20cl milk
- 50g crushed pistachios

Best way to eat tuna other than sushi
- 4 x 185g tins of Tuna (in Brine or spring water)
- 60g Butter
- 90g grated Cheddar Cheese (I use Vintage)
- 2 tablespoons Plain Flour
- 500ml Milk
- half teaspoon Mustard Powder
- 2 hard boiled Eggs (chopped)
- 4 tablespoons fresh White Breadcrumbs
- 2 tablespoons finely Chopped Chives ( have also used Spring Onions or Parsley)

This is the quickest meal to make, but full of nutrition and it looks great! The balance of flavours is just right
- One mug of 10 minute Bazmati rice
- 3 large smoked mackerel fillets (or 5-6 small fillets)
- 3 eggs (preferably free range)
