Tuna Fishcakes

A family favourite and great for using up left over mashed potato. These can be made with or without breadcrumbs. Always shallow fry and turn as little as possible in the pan to avoid them breaking up.

Ingredients
- 300g mashed potato
- 1 Tin Tuna drained
- salt and freshly ground black pepper
- good pinch of dried mixed herbs
- pinch of smoked paprika
- pinch of cayenne pepper

Preparation
Step 1
mix all ingredients together in a large bowl
Step 2
divide into 8 equal size patties and shallow fry until cooked through and golden brown.
Step 3
Drain on kitchen paper and serve
Great with a salad and some spicy sweet potato wedges
