Step 1

Brush the tuna steak in olive oil and leave to marinate for 15 minutes in a bowl with soya sauce and ginger syrup. Preheat the oven to 180 ° C.

Step 2

Open the cardamom pods and remove the seeds. In a mortar, put the coriander seeds and cardamom, crush and pour into a bowl. Add the remaining spices and salt. Mix.
Cut out 8 squares of 20* 20 cm in greaseproof paper. Remove the tuna steaks from the marinade and roll in the spice mixture.

Step 3

Place on the squares of paper and fold like a gift parcel. Bake for 10 to 20 mins depending on the thickness. Be careful not to cook the tuna for too long. It must remain soft inside.
Serve immediately with rice and a lamb's lettuce salad with a drizzle of argan oil.
