- 2lb Shin Shoga (Fresh Young Ginger)
- 2 Cups Sugar
- 3 Cups Rice Vinegar
- 2 tsp Salt

Preparation
Step 1
Wash then peel or rub off the skin from the ginger
Step 2
Salt the ginger in a bowl for about an hour
Step 3
Dry the ginger then place in a jar or container
Step 4
Bring the sugar and vinegar to the boil and pour over the ginger
Step 5
Let the mixture cool before sealing and refrigerating
