Ingredients
- 2 large salmon fillets (chopped into cubes)
- 4 potatoes (washed peeled and cut into small pieces)
- 1 leek
- 1 onion
- 3 cloves of garlic
- 1 carrot
- 2 tbl spoons of tomato puree
- drop of sherry
- salt, pepper and sugar

Preparation
Step 1
Chop the onion, leek, garlic and carrot.
Fry them in a saucepan until they are soft. But not brown.
Step 2
Add a splash of Sherry and remove from the heat for 4 mins (or until the Sherry evaporates)
Step 3
Add the tomato puree, salt, pepper, sugar and potatoes.
Step 4
cook for 2-3 mins more. before covering with cold water.
Step 5
let it simmer away until the potato is cooked through. Stirring occasionally.
Step 6
turn off the heat and add the salmon pieces. The heat of the pot will cook the salmon.
Step 7
