Ingredients
- 2oz butter, melted
- 1 onion, sliced
- 1oz plain flour
- 2pt chicken stock
- 1 bay leaf
- 1 large cauliflower, cut into florets
- salt and pepper
- 1/4pt single cream

Preparation
Step 1
Fry onion in butter until soft
Step 2
Stir in the flour, then the stock.
Step 3
Add the bay leaf and the cauliflower
Step 4
Cook till cauliflower is soft
Step 5
Remove bay leave and season with salt and pepper.
Step 6
Blend until smooth, stir in the single cream
Freezes well for up to 3 months
