Salmon with green lentils

Ingredients
- 4 salmon steaks
- 1 tablespoon hazelnut oil
- Black pyramid sea salt
- Sichuan pepper
- 1 tin of green lentils
- 1 tablespoon of thick crème fraîche (low fat)
- 10 g butter

Preparation
Step 1
Heat the oil in a frying pan and place the salmon skin side down. Cook for 10 to 15 minutes depending on the thickness. When cooked, add salt and pepper.
Step 2
While the salmon is cooking, heat the lentils, in their juice. Drain, return to the saucepan, add the cream and butter. Taste and adjust seasoning.
Step 3
Arrange the salmon on the plates accompanied by a little dome of lentils. Garnish with chives and pink peppercorns.
