Cabbage Kofta Curry

Kofta curries are my favourite and I prefer them any day
- For Koftas:
- 2 cup shredded cabbage /patha gobhi
- 3/4 cup gram flour or as needed
- 1/2 teaspoon cumin seed /jeera
- 2 teaspoon chopped coriander/hara dhania
- 1 teaspoon shredded ginger/adrak
- 1 chopped green chilli/hari mirch
- 1 teaspoon salt
- Oil to fry
- For Gravy:
- 3 medium tomatoes
- 2 onions/pyaz
- 1/2 inch ginger/adrak
- 5 cloves garlic/lehsun
- 1 green chilli
- 2 tablespoon yogurt
- 2 tablespoon oil
- Pinch asafoetida/hing
- 1 teaspoon cumin seed /jeera
- 1 tablespoon gram flour/basen
- 1 tablespoon coriander powder/dhania
- 1/2 teaspoon turmeric /haldi
- 1/2 teaspoon salt -adjust to taste
- 1/4 teaspoon red pepper powder/lal mirch
- 2 tablespoon finally chopped coriander/hara dhania
- 1 teaspoon sugar
Vegetarian Tagine

Place all the paste ingredients in a food processor and puree
- Paste:
- 3 tbsp olive oil
- 1 red onion chopped
- 3 garlic cloves
- 3 cm fresh ginger grated
- 1 tsp cumin
- 1 tbsp paprika
- 1 tsp turmeric
- 1 tsp mild chilli powder
- Tagine:
- 3 tbsp olive oil
- 2 carrots cut into sticks
- ½ a swede cubed
- 2 red onions cut into wedges
- 3 sweet potatoes cubed
- 400ml vegetable stock
- 6 dry apricots halved
- ½ a bunch of mint chopped
Texas style chilli beef

Original chilli with beef
- 1 tbs olive oil
- 130g of pancetta
- 2 large onions peeled and chopped
- 5 cloves of garlic peeled and chopped
- 2 tsp cummin powder
- 2 tsp hot chilli powder
- 1 and a half kilos of diced beef
- 284 ml beef stock
- 200ml red wine
- 2 tbs tomato purée
- 2 tsp oregano
- 1 tsp salt and pepper
- 100ml water
Mummy's Chilli

Add the onion and pepper and cook for a few minutes
- 1 onion
- 1 green pepper
- 1 tsp plain flour
- 1½ tsp hot chilli powder
- 1 tsp paprika
- ½ tsp cumin
- 1 tbsp tomato puree
- 1 tin of chopped tomatoes
- 1 tin of kidney beans

- 1 bunch spinach
- 1 cup frozen corn
- 1 tomato sliced in circles
- 3 green chillies chopped finely
- 1 tsp haldi/turmeric
- 1 pinch asafoetida/ hing
- 2 tbsp oil
- 1 clove garlic finely chopped/lehsun

Spicy barbecued leg of lamb, With minty lemon yoghurt for dipping

Preheat your oven to 200ºC/400ºF/gas 6 and pre-heat a frying pan
- 3 sticks lemon grass
- 5 cm piece fresh root ginger, peeled and chopped
- 5 cloves garlic, peeled and chopped
- 6 lime leaves
- 1 good pinch ground cumin
- zest and juice of 1 lemon
- sea salt
- freshly ground black pepper
- 1 quality leg of lamb, boned and butterflied
- a few sprigs fresh mint, leaves picked and finely chopped
- fat-free natural yoghurt

- 1/2 a teaspoon of Taos Lightning Chilli Powder blend (or similar)

BBQ Chicken Drumsticks and Spicy Rice

Preheat the oven to 180 degrees centigrade
- For the chicken:
- 10-12 chicken drumsticks
- 2 tablespoons Heinz tomato ketchup
- 2 tablespoon honey or maple syrup
- 1 tablespoon soy sauce (we use a dark soy sauce)
- 2 teaspoons english mustard
- 1 tablespoon malt vinegar
- 1 tablespoon sunflower oil
- 1 tablespoon sesame seeds
- 1 tablespoon plum jam (any sweet jam will do but strawberries and raspberries may taste a bit weird in a savoury dish!)
- For the rice:
- 1 tablespoon sunflower oil
- 2 small cups of rice
- 1/2 an onion (we used a red onion for colour)
- 2 peppers chopped (we used several different colours)
- 1 small can red kidney beans
- 1 teaspoon chilli powder
- 1/2 a can of chopped tomatoes
- 1 tablespoon Heinz tomato ketchup
- 3 cups of water
