Mix all the meatball ingredients, except flour and oil together

Prepare garlic oil by cooking garlic with oil fow a few minutes and transfer it to a bowl

Pad Noodles with Pork Strips and Prawns

- 125 g noodles
- 100 g pork fillet
- 1 1/2 tbsps groundnut oil
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- 85 g (3 oz) prawns
- 1 egg, beaten
- 1 tbsp fish sauce
- juice of 1/2 a lime
- 1/2 tbsp ketchup
- 1 tsp light muscovado sugar
- 50 g beansprouts
- 2 tbsps roasted salted peanuts, chopped
- 3 spring onions, sliced diagonally
Yaki Soba

- 200 g ramen noodles
- 1/2 onion, finely sliced
- 100 g beansprouts
- 1/2 red pepper, deseeded and sliced
- 75 g chicken, cooked and sliced
- 6 cooked prawns

- 1/4 tbsp mirin
- 1/2 tsp sesame oil

Udon Noodle Stir Fry with Fishcakes and Ginger

This is ridiculously filling
- 2 x 150 g packs of ready-to-wok udon noodles
- 1 leek, shredded
- 200 g beansprouts
- 8 shiitake mushrooms, finely sliced
- 2 pieces of fish cake, sliced
- 12 prawns
- 2 eggs, beaten
- oil
- 2 tbsps soy sauce
- 3 tbsps mirin
- 2 tbsps coriander, chopped

- 2 tbsps shredded red ginger

- 1 chicken breast
- 1 litre water
- 1/2 onion, with skin left on, cut in half
- 1/2 garlic clove, cut in half
- piece of ginger, peeled and sliced
- 2 black peppercorns, lightly crushed
- 2 cloves
- 1 star anise
- 1/2 celery stick, chopped
- 50 g baby corn cobs, sliced
- 1 spring onion, finely sliced
- 58 g (2 oz) dried rice vermicelli noodles
- 1/2 carrot, peeled and grated

- 175 g noodles
- 1 tbsp chopped coriander
- 1/2 red chilli, deseeded and finely chopped

- 3 shallots, finely chopped

- 1/2 tbsp light brown sugar
- 1/2 tbsp oyster sauce
- 1/2 tbsp fish sauce
- juice of 1/2 a lime
- 1 tbsp sweet chilli sauce
- 125 g beansprouts
- 2 spring onions, sliced
