Pad Noodles with Pork Strips and Prawns

This has a lot of ingredients but is really tasty so worth the effort.
Ingredients
- 125 g noodles
- 100 g pork fillet
- 1 1/2 tbsps groundnut oil
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- 85 g (3 oz) prawns
- 1 egg, beaten
- 1 tbsp fish sauce
- juice of 1/2 a lime
- 1/2 tbsp ketchup
- 1 tsp light muscovado sugar
- 50 g beansprouts
- 2 tbsps roasted salted peanuts, chopped
- 3 spring onions, sliced diagonally

Preparation
Step 1
Cook the noodles according to the pack instructions. Drain well.
Step 2
Slice the pork into strip about 5mm thick.
Step 3
Heat the oil in a wok and then stir-fry the shallots for 1-2 minutes.
Step 4
Add the pork and stir-fry for 2-3 minutes.
Step 5
Add the garlic and prawns and stir-fry for 1-2 minutes.
Step 6
Pour in the egg and stir for a few seconds until lightly set.
Step 7
Reduce the heat, add the noodles, fish sauce, lime juice, ketchup and sugar and toss together well. Heat through.
Step 8
Spring with beansprouts, peanuts and spring onions.
Step 9
Transfer to bowls, serve and enjoy!
