Pork Medallions with a Jerk Sauce

Ingredients
- 500g pork fillet, cut into 8 medallions
- 1 teaspoon ground coriander
- 4 spring onions
- Fresh coriander
- 2 cloves of garlic
- 2cm piece of ginger
- 1 tablespoon runny honey
- 1 red chilli
- 2 bay leaves
- 1 teaspoon allspice
- 1 tablespoon soy sauce
- 2 tablespoons red wine vinegar
- 6 tomatoes
- Salt and pepper

Preparation
Step 1
Sprinkle the pork medallions with salt, pepper and ground coriander
Step 2
Heat a pan to medium heat, add the pork and cook for 5 minutes on each side
Step 3
To make the sauce, liquidise all other ingredients with a splash of water
Step 4
Take the pork out of the pan, and add the sauce. Bring to the boil
Step 5
Add the pork back in to the pan and simmer for 5 minutes
Serve with rice
