Chicken with chorizo and peppers
Chicken cooked with chorizo, tomatoes and peppers served with white rice.
Ingredients
- 2 Chicken Breasts
- 1 Handful of Chopped Chorizo
- 1 Red pepper
- 1 Green Pepper
- 1 Yellow Pepper
- 3 Salad Tomatoes
- 2 Cups of White Rice

Preparation
Step 1
Cut the chicken into bitesize pieces. Pop in a frying pan with a drizzle of oil on a medium heat. Stir the chicken around occasionally to prevent uneven cooking.
Step 2
Meanwhile, chop the peppers and tomatoes into smallish pieces. Keep the peppers and tomatoes separate for now.
Step 3
Add the rice to a pan and cook according to the packet instructions.
Step 4
Once the chicken has cooked on the outside, add the chopped chorizo and peppers to the pan. Fry for a further 10 minutes, or until the chicken is almost cooked.
Step 5
Add the tomatoes and continue to fry until the chicken is cooked and the tomatoes are soft.
Step 6
Drain the rice, and place on plates, making a dip in the middle of the rice. Spoon the chicken into the dip and serve!
Chorizo is good, but not essential. This dish works just as well without Chorizo.
