Piña Colada Cupcakes

Take yourself to the beach with these moist Piña colada cupcakes. Bottoms up!
Ingredients
- Cupcakes
- 1 & 2/3 cups plain flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 1/4 castor sugar
- 1/2 cup unsalted butter, melted
- 1 egg
- 3/4 cup crushed pineapple
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract
- Icing
- 3/4 cup unsalted butter, room temperature
- 3 cups icing sugar
- 3/4 cup shredded coconut
- 1/4 cup coconut milk
- 1 teaspoon vanilla extract

Preparation
Step 1
Preheat oven to 180°C. Line a 12 cupcake pan with liners.
Step 2
In a medium bowl mix flour, baking soda & salt together.
Step 3
Place belted butter & sugars in a bowl & whisk.
Step 4
Whisk in eggs, coconut milk, vanilla & crushed pineapple until combined. Slowly add flour to wet mixture & mix until there are no lumps.
Step 5
Fill each cupcake liner & cook cakes for 20 mins or until golden.
Step 6
For icing whip butter until smooth & creamy. Mix in other ingredients & beat until creamy.
Step 7
Once cupcakes are cool, top with a good layer of icing. Decorate with a cocktail umbrella & little 'coconut' drink.
Step 8
To make little coconut drink:
Cut 1/4 of a malteaser.
Place a small amount of icing on the malteaser & place a star sprinkle & a small licorice piece to make a straw.
Allow to set & place on cupcake.
