Redcurrant sauce for lamb


This receipe also works with blackcurrant jelly which is perfect with duck breasts

  • 1/2 cup orange juice
  • 2 tblspns redcurrant jelly
  • pinch of fresh rosemary
  • 1/2 onion finely diced
  • oil for cooking
  • Salt and pepper

Step 1

heat oil in a small saucepan.

Step 2

Add onions and fry gently until softened but not coloured.

Step 3

Add the Orange Juice and redcurrent jelly and simmer until jelly has completely dissolved.

Step 4

Add rosemary and seasoning and simmer until reduced and thickened.
