Pork with Parma Ham and Feta Cheese

A modern take on the classic parmigana, with ham and feta cheese. Perfect for dinner with friends.
Ingredients
- 400g pork fillet
- 40g feta cheese - cut into 8 pieces
- 4 slices of Parma ham - halved
- 1 tablespoon olive oil
- Pepper

Preparation
Step 1
Cut the pork into 8 medallions. Cut a slit into the pork and poke a piece of feta into each medallion.
Step 2
Sprinkle with pepper and then wrap each piece of pork with parma ham.
Step 3
Flatten each medallion slightly
Step 4
Heat the oil in a pan and cook the pork medallions (turning regularly) until golden and cooked through
Serve with rice. You can drizzle the pork with balsamic vinegar just before serving
