Quorn, Pepper & Goat's Cheese Tart

Start by pre-heating your oven to 200°C (400° F, Gas Mark 6) and greasing a large baking sheet
- 320g puff pastry roll (I used Jus-Roll low fat one)
- 1 heaped tbsp sweet chilli cream cheese (I used Philadelphia)
- 250g Quorn chicken style pieces
- 1 red onion
- ½ red pepper
- ½ orange pepper
- 1 fresh red chilli
- 4 cloves of garlic
- 100g goat's cheese, no skin
- 2 tbsp olive oil (I used chilli infused)
- 1 tsp cumin seeds, crushed
- salt and pepper to taste

Preheat the oven to 180 degrees
- 1 x pack of ready rolled puff pastry
- Olive oil
- Fillings of your choice - sundried tomato and basil is nice, or just plain Boursin. Ham and cheese? Stilton and walnut? Pesto, parmesan and pine nuts? Spinach and feta? If its a good flavour combination, it will work here!

A wonderfully delicious French apple tart using seasonal English produce all set in a scrumptious soft set cream
- 250g good quality plain flour
- 125g salted butter room temperature and diced
- 10g caster sugar
- 1 tsp cold water
- 1 egg beaten
- pinch of sea salt

- 6-8 Worcester apples, peeled, cored and sliced into thick chunks kept in acidulated water to prevent browning
- 1 handful of ripe brambles or garden blackberries

- 2 tsp icing sugar for dusting

- A topping - veg such as mushrooms, onions and peppers work well. Or Serrano ham and rocket salad. Or tomatoes, feta and olives. The possibilities are endless really.
