This recipe makes 2 loaves
- Dough
- 2 cups warm whole milk
- 1/2 cup light olive oil
- 1 tsp sugar
- 1 tsp salt
- 4-5 cloves minced garlic
- 2-3 tbsp dried Italian herbs
- 1 tsp red chilli flakes
- 7g active dry yeast
- 4 cups (plus 1/2 cup extra, separated) plain flour
- 1/2 heaped tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 to 3/4 cup roasted almonds - chopped fine
- filling
- 200g cheddar or mozzarella
- Preserved chili peppers or olives, roasted bell peppers etc
- 50-75gm unsalted butter, melted and cooled
