Yellow Rice, Red Pepper

Perfect for hassle-free lunches, this colourful meal is easy to make the night before
- 1tbsp olive oil
- 1 onion
- 1 red pepper (if Esther hasn't munched on it already!)
- thumb-sized piece of fresh root ginger
- 250g basmati rice
- 1tsp turmeric
- 600ml vegetable stock
- seasoning
- OPTIONAL: 25g flaked almonds

I reckon this is a dish I could eat a lot of, and on its own
- 1 butternut squash
- 8 baby new potatoes
- 2 tablespoons of cumin seeds
- 4 halved long shallots
- 400gm tin of drained cannellini beans
- Pinch of a garam masala mix
- 125gm of vegetable stock
- 1 tablespoon of crème fraîche
- Black pepper
- Olive oil

- 1 small cucumber
- 300 ml Greek yoghurt
- 1 garlic clove crushed
- 1 tbsp of chopped fresh mint

Marrow Chutney

- 2 x tablespoons of mayonnaise
- 2 x tablespoons of sour cream

Teriyaki Scallops: Put soy sauce and honey into a pan and simmer for 4-5 minutes until reduced and sticky
- Teriyaki Scallops:
- 3 tablespoons soy sauce

- 2 scallops (halved)
