Roasted New Potatoes

Ingredients
- 1 x bag of new potatoes
- 4 x garlic cloves
- 2 x tablespoons of mayonnaise
- 2 x tablespoons of sour cream
- 1 x teaspoon of herbes de Provence
- Chives
- Salt
- Pepper
- Olive oil

Preparation
Step 1
Preheat the oven to 180 degrees. Rinse the new potatoes and then leave to try.
Step 2
Take each garlic clove and lay flat on a chopping board, place the flat part of a large knife on top of the clove and push down hard. The clove should split but stay in the skin. Repeat for the remaining cloves and place into a baking tray. (Leaving the skin on stops the garlic burning).
Step 3
Place the new potatoes in the baking tray with the garlic, cover with a good glug of olive oil, a good sprinkling of salt and the herbes de Provence. Mix until evenly coated and put I'm the oven until cooked on the inside and crisp on the outside.
Step 4
Meanwhile, mix together the mayonnaise and the soured cream. Chop a large handful of chives and stir into the mixture with a touch of pepper.
Step 5
When the potatoes are cooked, pile them into a bowl and serve with the dip!
