Caesar salad cups

Ingredients
- A small amount of any stale bread (baguette or sliced etc is fine)
- Olive oil
- Salt and pepper
- 1 x teaspoon of herbes de provence
- 1 x little gem lettuce head
- A small handful of Parmesan shavings
- 1 x large chicken breast
- 4 x rashers of bacon
- A bottle of ready made Caesar salad dressing

Preparation
Step 1
Preheat the oven to 180 degrees. Cut the bread into small cubes and pop in to a baking tray. Cover in a good glug of olive oil and the herbes de Provence, and then sprinkle a little salt and pepper on top. Mix about until everything is evenly covered. Pop in the oven for approximately 10 minutes or until the bread is golden and crunchy.
Step 2
Place the rashers of bacon on to a separate baking tray and place them in the oven. They will turn beautifully crisp and crunchy! This should take about 10 minutes.
Step 3
Meanwhile, cut the chicken breast in to bite sized pieces and fry in a little olive oil until cooked.
Step 4
Cut the bottom of the little gem lettuce and allow it to fall in to individual leaves.
Step 5
In the bottom of each lettuce leaf, place a piece or two of the cooked chicken and cover with a teaspoon or so of the Caesar dressing.
Step 6
Take the bacon out of the oven and it should break easily into crispy shards. Place a couple of pieces of the bacon on top of the chicken and then sprinkle the top with some Parmesan shavings. Pop a crouton on top and then enjoy!!
