Brown the chicken breasts in a pan with a tablespoon of olive oil. Add a little water and cover to finish cooking gently (10 min), so as not to dry out.
Cook eggs in boiling water for 6 min. Then plunge them into cold water to stop the cooking.
Mix all the sauce ingredients.
Cut the chicken into strips. Shell the eggs. Divide among the number of plates the croutons and chicken strips. Lay an egg on top, add the sauce and sprinkle with Parmesan.
