- 8 medium potatoes
- 2-3 carrots
- 1 medium leek
- For Stock Either:
- a flank of mutton and one lamb stock cube OR 2-3 lamb stock cubes

Peel the tomatoes - prick them with a sharp knife, place in a bowl and cover with boiling water
- 900g tomatoes
- 3 red peppers, 1 large aubergine and 1 green pepper (total weight of about 900g/2lb)
- 700g onions, peeled and fairly finely chopped by hand or in a food processor
- 4 fat cloves garlic, crushed
- 350g granulated sugar
- 300ml/½pint white wine vinegar or distilled malt vinegar
- 1 tbsp salt
- 1 tbsp coriander seeds, crushed
- 1 tbsp paprika
- 2 tsp cayenne pepper

This is a recipe I first came across in Tuscany, though I have had similar hearty soups in Rome and Sicily
- 2 tbsp olive oil
- 1 celery stick chopped
- 1 onion chopped
- 1 large carrot chopped
- 1 litre of chicken or veg stock
- 400 gm can of cannellini beans drained
- 400 gm can of borlotti beans drained
- Sprigs of fresh thyme and rosemary
- 1 bay leaf
- 8 rashers of prosciutto – or you could, at a pinch, use streaky smoked bacon
- 4 good Sicilian sausages – or, frankly, any top quality bangers with flavour
