Trim the coriander by removing the very ends of the stalks

  • A large bunch of coriander
  • 2 lemongrass stalks
  • 2 shallots, chopped
  • 2-3cm piece fresh root ginger, chopped
  • 1 fat clove garlic, crushed
  • 1-3 red birds eye chillies,
  • roughly chopped (to taste)
  • 2 tbsp fish sauce
