  • 150g cooked rice
  • cooled and then refrigerated
  • 1/2 green pepper
  • 1/2 orange pepper
  • 4 dried apricots
  • 100g red kidney beans
  • fresh parsley
  • low fat dressing

Step 1

Cut peppers and place into a bowl with cooked rice and dried apricots.

Step 2

Drain kidney beans and to bowl

Step 3

Add parsley and dressing and stir. Ready to serve!


Use other vegetables or potato or pasta instead of the ones given here.
