- 150g cooked rice, cooled and then refrigerated
- 1/2 green pepper
- 1/2 orange pepper
- 4 dried apricots
- 100g red kidney beans
- fresh parsley
- low fat dressing

Step 1
Cut peppers and place into a bowl with cooked rice and dried apricots.
Step 2
Drain kidney beans and to bowl
Step 3
Add parsley and dressing and stir. Ready to serve!
